Why does the panoramic image end up with a curved top and bottom on each of the stitched images? I just want to pull them together.

This comes from the image "warp" that converts the images from planar projections to spherical projections. The warping is necessary because each image is made with a different projection plane (film plane orientation). Without the warping, the overlap regions would not match from image to image. See also What is Stitching at The Guide to Panoramic Photography for more information.

Of course, this answer assumes you are using a conventional camera. If you are using a rotational or swing-lens panoramic camera, the camera itself produces cylindrical projections (which, like spherical projections, will match correctly). In this case, you should disable the image warping by selecting Curved Film plane in the Focal length dialog (Tools menu). You can try this with conventional images also, but you'll get kind of strange results.

Are there any tools available to de-warp the image after the stitching is done? Seems if you take a shot of a building and you know the roof is supposed to be straight but ends up curved, there should be a way to map the curved image back to a straight line.
