The best way to make sure the camera rotates around the optical center (nodal point) is to use a special panoramic tripod head such as the Panosaurus from Gregwired Digital Images.

The web page Using a panoramic head at www.panoguide.com has excellent instructions for setting up a panoramic tripod head so that the lens nodal point is properly positioned.
